- Cut watermelon into chunks and remove seeds.
- Blend the watermelon until smooth. Strain through a sieve if you prefer a smoother juice.
- Juice lemons and add to the watermelon juice in a pitcher.
- Stir in cold water or sparkling water to dilute to taste.
- Add sweetener if desired, then chill in the refrigerator for 30 minutes.
- Serve over ice or watermelon ice cubes. Garnish with mint and lemon slices.
