Ingredients

  • 4 fresh strawberries sliced
  • 6 fresh mint leaves
  • 1 tablespoon fresh lime juice
  • 1 teaspoon simple syrup or honey optional
  • ½ cup Sprite or sparkling water
  • Ice crushed, as needed
  • 1 mint sprig for garnish

Instructions

  • In a highball glass, add sliced strawberries, mint leaves, and lime juice. Muddle gently.
  • Add simple syrup if using, and stir to combine.
  • Fill glass with crushed ice to the top.
  • Pour Sprite over the mixture until the glass is full.
  • Stir gently from bottom to top.
  • Garnish with a mint sprig and strawberry slice. Serve immediately.

Notes

To make a pitcher, multiply all ingredients by 6 and prepare in a large carafe.
Use soda water instead of Sprite for a lower-sugar version.
Try flavored sparkling water for a fruity twist.
This mocktail pairs beautifully with grilled shrimp or goat cheese crostini.
