Ingredients
  

  • 1 cup pineapple juice fresh or chilled
  • 0.5 cup sparkling water or soda
  • 1 tbsp lime juice freshly squeezed
  • 4 mint leaves lightly muddled
  • ice cubes to serve
  • pineapple wedge or lime slice for garnish

Method
 

  1. Fill a shaker with pineapple juice, lime juice, mint leaves, and ice.
  2. Shake until chilled and frothy.
  3. Strain into tall glasses filled with ice.
  4. Top with sparkling water and stir gently.
  5. Garnish with pineapple wedge or lime slice.
