Equipment

  • Tall glass or shaker
  • Muddler or spoon
  • Knife & cutting board

Ingredients

  • ½ cucumber thinly sliced (organic preferred)
  • 2 tablespoons fresh lime juice
  • 6 –8 fresh mint leaves
  • 1 teaspoon honey or agave optional
  • 1 cup chilled sparkling water or club soda
  • Ice cubes as needed
  • Garnish: cucumber ribbons lime wedges, and mint sprigs

Instructions

  • Place cucumber slices and mint leaves in a glass or shaker.
  • Gently muddle to release juice and oils (do not over-crush).
  • Add lime juice and honey/agave if desired.
  • Fill the glass with ice.
  • Top with sparkling water or club soda.
  • Stir gently, garnish with cucumber ribbons and mint, and serve immediately.

Notes

For a Watermelon Cucumber Cooler, replace half the sparkling water with fresh watermelon juice.
For a Spicy Cucumber Cooler, add a thin jalapeño slice when muddling.
For a Cucumber Basil Cooler, swap mint leaves for fresh basil.
Best served immediately, but cucumber-infused water can be prepared ahead and chilled.
