Ingredients
  

  • 1 cup pineapple juice chilled
  • 0.5 cup coconut milk or swap with coconut water for a lighter version
  • 1 tsp lime juice freshly squeezed
  • 1 cup ice crushed or cubed
  • Sprite optional, for fizz
  • garnishes pineapple wedge, mint leaves, toasted coconut flakes

Method
 

  1. Add pineapple juice, coconut milk (or coconut water), and lime juice to a shaker with ice. Shake until frothy and chilled.
  2. Strain into a tall glass over fresh ice.
  3. For a blended version, combine pineapple juice, coconut cream, and crushed ice in a blender until smooth.
  4. Optional: top with Sprite for fizz.
  5. Garnish with pineapple wedges, mint leaves, or toasted coconut flakes. Serve immediately.
